Spring equinox was this past week—hooray!

The new season can mean a lot of things: budding flowers, warmer weather, longer days, and gardening. For the Vukoo team though, spring means fresh produce and the re-opening of all our favorite farmers markets.

Asparagus, broccoli, artichokes, peas…these delicious veggies are in season now that spring is here. We can hardly wait to consume all the greens, as well as up our Jerfing game.

Creamy Asparagus and Pea Soup

Watercress, often overlooked by spinach, kale, romaine, or arugula for salads, is packed with Vitamin K (one cup meets daily recommendation). It also has been said to help reduce cancer treatment effects and lower blood pressure.

Broccoli, Cheddar, & Quinoa Gratin

In Colorado, spring often means a lot of snow and storms. That’s why we love warm recipes that incorporate spring produce—specifically this one.

This casserole is cheesy, gooey, and filled with fresh broccoli florets. It also makes great leftovers.
