Spring equinox was this past week—hooray!
The new season can mean a lot of things: budding flowers, warmer weather, longer days, and gardening. For the Vukoo team though, spring means fresh produce and the re-opening of all our favorite farmers markets.
Asparagus, broccoli, artichokes, peas…these delicious veggies are in season now that spring is here. We can hardly wait to consume all the greens, as well as up our Jerfing game.
Here are four we are dying to try. Check them out:
Creamy Asparagus and Pea Soup
From: The Minimalist Baker
A perfect recipe for the chilly spring nights, this recipe is loaded with asparagus, peas, and garlic. Only 30 minutes to prep and cook, this soup is a great way to eat up spring produce while staying warm.
Smoky Chickpea and Watercress Salad
From: One Green Planet
Watercress, often overlooked by spinach, kale, romaine, or arugula for salads, is packed with Vitamin K (one cup meets daily recommendation). It also has been said to help reduce cancer treatment effects and lower blood pressure.
Try out this delicious spring salad to experience the health (and taste) benefits of watercress this season.
Broccoli, Cheddar, & Quinoa Gratin
From: Cookie and Kate
In Colorado, spring often means a lot of snow and storms. That’s why we love warm recipes that incorporate spring produce—specifically this one.
This casserole is cheesy, gooey, and filled with fresh broccoli florets. It also makes great leftovers.
Tropical Mango, Banana, & Pineapple Kale Salad with Creamy Pineapple Lime Coconut Dressing
From: Oh She Glows
In the fruit aisle, pineapple is in season, and this recipe is so delicious it makes us want to go on vacation.
Whip this salad up and enjoy outside, even if the air is still cool. It would also make a great party or gathering salad.
