The first week of January is in full swing and most of us are back at work, or school. We survived the holidays, balancing our sweets and alcohol intake (hopefully) and maybe even sneaking in a few morning runs. But it’s back to the grind and we all know how hard it can be to set our alarm clocks once again. Waking up before the sun and forcing ourselves to roll out from under the covers never seemed so impossible! Don’t worry though, only 9 more weeks until Day Light Savings…
Drama aside, all of us at Vukoo believe in you and your New Year health goals. So to celebrate—and to make getting out of bed a bit more appealing—we’ve created a breakfast bowl recipe you’re going to want to try. It’s warm, hearty, and sure to give you energy for the day. It can also be adjusted to meet your dietary needs and flavor preferences. Check it out:
Breakfast Bowl Ingredients:
- ½ cup steel cut oats
- ½ cup quinoa
- 1 cup cubed sweet potatoes (bake the night before for shorter prep time)
- ¼ cup almond or coconut milk
- 2 tbsp pepitas
- 1 tbsp sunflower seeds
- 1 tbsp chia seeds
- Sprinkle of cinnamon, adjust to taste
- Drizzle of honey or maple syrup, adjust to taste
Breakfast Bowl Directions:
- Cook steel cut oats and quinoa according to package directions. Double or triple recipe to store for those mornings you keep hitting snooze
- Combine cooked oats and quinoa in small bowl
- Gently toss in cooked sweet potato being careful not to mash
- Pour in almond or coconut milk
- Top with pepitas, sunflower seeds, and chia seeds
- Sprinkle on cinnamon
- Drizzle honey or maple syrup over entire bowl
- Eat immediately and enjoy!
**This recipe can be easily modified to satisfy different dietary needs and preferences. Some of our recommendations include swapping our sweet potatoes for apples, squash, or berries. You can also try the bowl with almonds, cashews, Brazilian nuts, coconut flakes, and/or pecans. And if you’re feeling adventurous, we recommend chopping up a Vukoo bar to toss in for added flavors and extra protein!
