4 Healthy Snack Recipes for the Week Ahead

During the week, especially when it gets busy, it can be challenging to stay fueled on healthy foods. It's often easier to reach for something packaged and sugary. Fast food looks more appealing when you're driving around town and you realize you don't have a nutritious snack on hand.

That's why we love these snack recipes for keeping us on track throughout the week. Of course our go-to is a Vukoo bar, but we like to mix it up as well! For plant-based, nutritious, and vitamin-rich snacks, try one of these recipes out!

1. Pita Bread with Hummus

Recipe by: knead. bake. cook.

For hummus and pita, this is our favorite recipe. The pita bread is soft and warm, the hummus zesty and rich. While this recipe takes a bit longer to make (you have to soak the chickpeas first), it's worth it to have some fresh hummus in the fridge throughout the week. For an even healthier alternative, swap the pita for fresh veggies.

2. Coconut Cacao Tahini Snack Bites

Recipe by: Minimalist Baker

For an easy plant-based snack you can eat on the go, we love these coconut cacao bites from one of our favorite bakers. Using ingredients like tahini, dates, coconut butter, protein powder, and hemp seeds, this delicious snack is packed with protein and healthy fats.

3. Homemade Granola Bars

Recipe by: Love & Lemon

In addition to Vukoo bars, we love making homemade granola bars in our kitchen—and these ones from Love & Lemon are seriously delicious. Using only seven ingredients, they are easy to make and perfect for those mornings when you don't have time for breakfast. Eat alongside a banana or a large cup of berries for a quick first meal.

4. Hummus and Veggie Roll Ups

Recipe by: A Couple Cooks

This one is a bit more extravagant, but who says snacks need to be boring? The best part is, you can make these on a Sunday and then have them stored in the fridge for quick snacks throughout the week. Eat alongside your homemade hummus!
