3 Plant-Based Burger Recipes Reminding Us It's Still Summer

This past week, we tried our hand at homemade burgers. With summer still lingering, we were craving a meal reminiscent of camping and barbecues with friends. Obviously, this summer has looked different than the rest, and so we aren't getting to experience loved activities in the same way season—but that doesn't mean we can't remind ourselves through taste. 

For our burgers, we used chickpeas, an egg, lots of veggies (like mustard greens, lemon cucumbers, and red pepper), as well as gluten-free flour, avocado oil, and our favorite spices. They came out just about perfect, and we even have enough patties for weekend leftovers. 

To share the summer spirit, we thought we'd round up a few of the most delicious-looking plant-based burger patties so that you can whip up your own socially-distant summer picnic this weekend! 


1. Easiest Vegan Chickpea Burgers

If you want something simple and straightforward, Loving It Vegan has nailed the plant-based burger. This was the recipe we built off of when making our own version of chickpea patties. The ingredients are incredibly simple (onion, garlic, chickpeas, flour, oil, + spices) and ones you likely have on hand in your kitchen. Of course, you can always add your own ingredients as we did. (If you like a bit of heat, try adding red chile peppers.)

2. The Best Black Bean Burger

Recipe by: Tastes Better From Scratch

Black bean burger, anyone? This recipe is also simple, calling for only an onion, egg, bell pepper, bread crumbs, spices, and of course, black beans. You'll need a food processor to get everything mashed up, but after that, it takes less than ten minutes to have your cooked and ready-to-eat patty. We're excited to give this one a try!

3. Grillable Veggie Burger

If you really want something reminiscent of summer, Minimalist Baker has figured out a veggie pattie that can actually be grilled. It's also one of the more nutritious options on the list as it calls for brown rice, black beans, and walnuts—lots of healthy carbs and fats! The vegan bbq sauce makes this one extra tasty.
