Did you know squash is a fruit (see: seeds)? Neither did we! Nevertheless, this doesn't change our love for this tasty and colorful food. And with fall ramping up (hello October!), we're buying up all the varieties and preparing them in numerous ways. Here's why:
1. Squash is Wonderful for Your Health
It's usually the first thing we check before falling in love with a specific food. And boy are we thankful squash is packed with excellent nutrients and health benefits. We're talking Vitamin A, Vitamin C, B-Vitamins, Potassium, Magnesium, Calcium--you name it. The list is quite exhaustive. It also varies depending on which squash you're eating.
The good news is: squash is terrific for your health. The colorful fruits have immunity-boosting and anti-inflammatory powers, as well as heart and lung benefits. So eat up!
2. Squash is Super Easy to Prepare
Squash at the grocery store can be intimidating. With its thick skin and odd shapes, it can seem like something that takes a while to prepare. But the truth is, squash is mostly hands-off once you get it home. Here's our favorite way to make it:
Wash your squash and then slice it in half (drizzle olive oil on top or sprinkle on some garlic for extra flavor); then place the two halves face down on a baking sheet. Roast in the oven at 375 F for 30-40 minutes, or until the flesh is starting to brown and bubble. Wait for your squash to cool before scooping out the flesh. Slice it up for a warm salad, puree it for soup, etc.
3. Squash is Inexpensive, and Often Local
This changes depending on where you live, but more often than not, squash is incredibly affordable and usually grown locally. This is especially true because the fall fruit is in season, so now is a fantastic time to stock up (uncooked squash can be stored for weeks). Visit your local farmers market this weekend to see if you can find some!
