When colder temperatures hit, we love using our Instant Pot for quick, hearty, and healthy meals. And since it's supposed to be a cooler weekend, we thought we'd share a few of our favorite recipes that you can try too! After a day in the mountains snacking on Vukoo bars (now made with compostable packaging!), we look forward to making these quick but tasty dinners for a night in.

Though we recommend an Instant Pot for these, you can also make them in a pot on the stove--just check to see if the recipe has alternative cooking methods.
