The weekend is here and, as we continue sheltering-at-home, we're ready to get creative in the kitchen. Lentils are a healthy pantry staple, as they keep for a long time and can be used in almost any dish. They are also incredibly affordable and can be bought in bulk—minimizing excess packaging and waste.
Here are a few of the recipes we're eyeing for our weekend chef-session. They are easy, (mostly) plant-based, and as nutritious as they look delicious!
1. LEMONY LENTIL SOUP

This recipe combines riches spices with hearty veggies and red lentils. The acidic lemon and minced garlic brighten the soup and give it a powerful flavor-boost. We love devouring a big bowl alongside peppery crackers or warm bread.
2. ONE POT CHEESY MEXICAN LENTILS

For a Mexican-inspired dish that resembles something of a burrito bowl, this one pot lentil recipe is healthy, vegetarian, and gluten-free. It includes lots of veggies, spices, beans, and—our favorite—green chiles. Customize with your preferred mixing and top with cashew sour cream.
3. LENTIL EGGPLANT LASAGNA

This dish combines eggplant and lentils for a unique and healthy take on a household favorite. We especially love the tofu ricotta replacement, made cheesy with nutritional yeast and vegan parmesan cheese. Second servings recommended!

5. LENTIL-CHICKPEA VEGGIE BURGER

If you love burgers but would rather they be vegetable-based and healthy, you'll love this recipe from Cookie + Kate. Using lentils, chickpeas, onion, a handful of spices, and eggs, she's created the perfect version of a lentil patty. We're not sure what we love more—the vegetarian patty or the avocado green harissa sauce.
