3 Dishes to Swap Noodles with Zoodles, with Recipes

If you haven't tried zucchini noodles in your favorite pasta and noodle-based dishes yet, you've been missing out. Zoodles are not only a healthier alternative to the traditional wheat or rice noodles, but they are also really fun to make!

To keep in line with our health and fitness goals this fall (because who isn't craving soups and stews and warm pasta dishes - in addition to these yummy autumn salads), we're making a few alternations to our favorite cold-day recipes. Specifically, we're swapping noodles for zoodles! Here are a few of our favorite dishes we're making healthy:

zoodles

Pad Thai

A stir-fry rice noodle dish traditional to Thailand, pad thai is an exciting meal full of flavor and spice. Unfortunately, it's also packed with carbohydrates, sodium, and calories. For a healthier version of this classic dish that keeps in line with your wellness goals, there are a few substitutes that can be made, including swapping the rice noodles with zoodles ( zucchini noodles). Rather than the traditional fish sauce, try Cookie + Kate's peanut butter-based sauce instead.

Spaghetti

A tasty, filling, and flavorful meal common for community-style dining, spaghetti is more than a popular family dinner dish. Loaded with carbs and often accompanied with fatty meatballs and buttery garlic bread, even a small plate of spaghetti can throw off your health goals. With a few adjustments though, including using zoodles for pasta, this loved Italian dish can actually be healthy. We love this Lentil Bolognese Zucchini Pasta by the Minimalist Baker. Try it out this fall!

Ramen

One of our favorite fall dishes, nothing says warm and cozy like an oversized bowl of ramen. A meal traditional to Japan, ramen is often made with wheat-noodles, as well as fish sauce, pork, and veggies. For a healthier (but still hearty) take on ramen this fall, try Jar of Lemons' Vegan Ramen Soup with Zucchini Noodles. Packed with veggies and vegetable broth, this bowl of ramen is (dare we say) better than the original recipe.
