Summer is all about easy food and even easier days. With the heat fast approaching, we love nothing more than grabbing a breakfast bar on the go as we head to the mountains for our next adventure.
And while, of course, we love Vukoo bars for breakfast, lunch, and dinner (snacks and desserts, too!), we like to make breakfast bars at home from time to time. Because not only are they quick, easy, and affordable, they are also healthy and delicious. Try for yourself! Here are a few of our favorite recipes:
5-Ingredient Breakfast Bars
Recipe by: Minimalist Baker
A breakfast bar with only five ingredients? Yes, please! Minimalist Baker is our go-to for just about every recipe, and this one for gluten-free, vegan breakfast bars does not disappoint. All you need is rolled oats, dates, maple syrup, peanut butter and almonds.
Peanut Butter Banana Oatmeal Breakfast Bars
Recipe by: Well Plated
If you love peanut butter, you'll love this recipe made with PB, bananas, eggs, and plant-based milk. The added cinnamon gives the bars the very best flavor, and we find ourselves reaching for seconds (and thirds!)—a go-to weekday recipe.
Raspberry Applesauce Paleo Breakfast Bars
Recipe by: Paleo Gluten Free Eats
These bars are so flavorful. And they are paleo! We love making a large batch to keep in the freezer, especially for hot and lazy summer days. Ingredients include almond milk, almond flour, and almond butter (and, of course, raspberries). Perfect for making with fresh berries too!
No Bake Energy Bites
Recipe by: Gimme Some Oven
While not officially a bar, we love these breakfast balls for morning energy! They are packed with flavor and nutrition, and we love that they don't require any cooking. Plus, the shredded coconut makes us feel like we are off to some tropical vacation. Perfect for summer!
