An oldie but goodie, we love this recipe by Cookie + Kate to get our spring dose of asparagus! With only eleven ingredients (most of which you probably already have in the kitchen), this frittata is gluten-free and absolutely delicious. It can most likely be made plant-based as well with a few substitutes.

We love this recipe because (1) it cooks itself in the crockpot and (2) it gives us all our favorite spring veggies in the form of a warm dish, which is perfect for the Colorado spring blizzards! Using yummy greens like peas, spinach, and asparagus, this is a great weekend dinner that makes enough for weekday leftovers.
